The humidity problem

Most commercial cabinets hold 35 – 45 % RH — lethal for buttercream, ganache and fresh-cream assemblies. ProChill pastry cabinets regulate humidity to the top of the dew-point curve: cold enough to hold, wet enough to display, dry enough never to drip.
